A Perfect little Pancake Recipe
2 Cups All-purpose flour
2 TBS Sugar
1 ½ Tsp Baking Powder
1 ¼ Tsp Baking Soda
1 ¼ Tsp Salt
2 ¼ Cups Buttermilk
¼ Cup Melted Butter
2 Eggs I separate them, but it’s optional
½ Tsp Real Vanilla
Place all the wet ingredients, plus the sugar, in a medium sized bowl and gently whisk until combined.
Place remaining dry ingredients in a small bowl and gently whisk to combine.
Slowly add dry to wet ingredients while gently whisking until just combined.
A few small lumps are okay, do not over mix.
Let batter rest until pan is heated.
Dot with butter or drop a few tablespoons of clarified butter (or even coconut oil) and spread around.
Use ½ cup measure to drop your cakes (as we call it in the business).
Wait for bubbles and flip!
